Apple Pie Spice Granola

  • 2 cup raw organic nuts (cashews, almonds, hazelnuts, pecans, walnuts etc)
  • 1 cup Rolled Oats (Gluten-free if you are gluten-sensitve or Celiac)
  • 1/2 cup raw organic pumpkin seeds
  • 1/2 cup raw organic sunflower seeds
  • 1/4 cup hemp hearts
  • 1 tbsp chia seeds
  • 1/4 cup coconut oil
  • 1/3 cup organic honey
  • 1 tsp. pure vanilla
  • Pinch of sea salt
  • 2 tsp. Epicure Apple Pie Spice

  1. Preheat oven to 275 °F.
  2. In a food processor add nuts and seeds, to chop into small pieces. Be careful not to over blend.
  3. Heat coconut oil, honey, Apple Pie Spice, vanilla and sea salt over medium high heat in a saucepan until melted.
  4. Combine in a mixing bowl - the wet mixture with your seeds, nuts and oats. Stir to coat.
  5. Spread granola mixture evenly onto a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes or until lightly browned.
  7. Allow to cool for about 20 minutes or until hardened. Break apart granola. Store in an airtight container or mason jar for up to 2 weeks (if it lasts that long!!).

You’re welcome to use a different combination of nuts and seeds (whatever you might have in your house works well!). If you have dried fruit, you can chop some up and mix it in after the granola has cooled. Apricots, cranberries, dried apple or raisins are good options.

This granola is delicious served on top of kefir, full fat organic yoghurt, or coconut yoghurt with some berries! Yoghurt parfait, anyone?
