Fresh Bruschetta with Pesto Seasoning

The season is changing and the weather is heating up! It's time to think about simple, fresh recipes that we can make easily with all the delicious vegetables growing in the garden and at the market.

Here is my recipe for Fresh Bruschetta with Pesto Seasoning, taking advantage of fresh basil and tomatoes - it doesn't require any cooking (so with this warmer weather ... your house won't heat up while you're preparing a meal).

Fresh Bruschetta with Pesto Seasoning


1 cup chopped Fresh Basil

4 Tomatoes, diced (skin and seeds still intact)

1/2 Red Onion, diced

1/3 cup Sundried Tomatoes

2 tbsp Extra Virgin Olive Oil

1 tbsp Balsamic Vinegar

1 tbsp Epicure Pesto seasoning

Pinch of Sea Salt

Black Pepper to taste


  1. Mix all the ingredients together in a mixing bowl.
  2. Let sit in the fridge for 15 minutes, to let all the flavours marinate together. That's it! 

Serving suggestion: I like to serve this on thinly sliced sourdough toast, topped with fresh mozzarella.

I place the toast on a baking sheet lined with parchment paper. Spoon the bruschetta on top of the toast and place 1 slice of fresh mozzarella on top. Pop it under the broiler in the oven until it's melted (about 3 minutes). Drizzle a little fresh olive oil on top, and a fresh grind of black pepper. Serve with a nice big green salad to make it a meal.

Also great served with brown rice crackers or tortilla chips for a fresh, nutritious snack.
